Escalivada verduras asadas horno (Imprimir)

Verduras asadas al horno con aceite de oliva y vinagre. Sabor ahumado y textura suave, ideal para compartir.

# Ingredientes:

→ Vegetables

01 - 2 large red bell peppers
02 - 2 medium eggplants
03 - 2 medium zucchinis
04 - 1 large onion
05 - 4 cloves garlic

→ Seasoning

06 - 4 tablespoons olive oil
07 - Salt to taste
08 - Black pepper to taste
09 - 1 tablespoon red wine vinegar

# Instrucciones:

01 - Preheat the oven to 200°C (400°F).
02 - Wash and slice the vegetables into quarters or thick slices.
03 - Place the vegetables on a baking sheet and drizzle with olive oil, salt, and pepper.
04 - Roast in the oven for about 30-45 minutes, turning occasionally, until the vegetables are tender and slightly charred.
05 - Remove from the oven and allow to cool slightly. Peel the skin off the roasted peppers and garlic.
06 - Slice the vegetables into strips, mix them in a bowl, and drizzle with red wine vinegar.
07 - Serve warm or at room temperature, garnished with additional olive oil if desired.

# Notas:

01 - For added flavor, consider adding fresh herbs like parsley or thyme.
02 - Escalivada can be served with crusty bread or as a topping for grilled meats.
03 - Pair with a light red wine, such as a young Tempranillo.
