Wash and slice the vegetables into quarters or thick slices.

Place the vegetables on a baking sheet and drizzle with olive oil, salt, and pepper.

Roast in the oven for about 30-45 minutes, turning occasionally, until the vegetables are tender and slightly charred.

Remove from the oven and allow to cool slightly. Peel the skin off the roasted peppers and garlic.
