I first made these churro biscuit cookies for a themed movie night, and everybody loved their silly shapes and classic churro taste with a cookie twist.
Ingredients
- All-purpose flour: 2 cups (250 g)
- Baking powder: 1 tsp
- Baking soda: 1/2 tsp
- Salt: 1/2 tsp
- Ground cinnamon: 1 1/2 tsp (plus 2 tsp for rolling)
- Unsalted butter, softened: 1/2 cup (115 g)
- Granulated sugar: 1/2 cup (100 g for dough + 1/2 cup (100 g) for rolling)
- Light brown sugar, packed: 1/2 cup (100 g)
- Eggs: 2 large
- Pure vanilla extract: 1 tsp
- Optional chocolate: melted milk or dark chocolate for drizzling
Instructions
- Preheat Oven:
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Beat Wet Ingredients:
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy and fluffy (about 2 minutes).
- Add Eggs & Vanilla:
- Beat in eggs, one at a time, then add vanilla extract.
- Combine Mixtures:
- Gradually add dry ingredients to wet mixture and mix until just combined.
- Prepare Cinnamon Sugar:
- In a small bowl, combine 1/2 cup sugar and 2 tsp cinnamon for rolling.
- Shape Dough:
- Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in cinnamon sugar mixture to coat.
- Arrange & Flatten:
- Place balls on prepared baking sheets, spacing about 2 inches apart. Gently flatten cookies with your palm for a classic silly shape.
- Bake:
- Bake for 10–12 minutes, until edges are golden but centers are soft.
- Cool:
- Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
- Decorate (Optional):
- If desired, drizzle cooled cookies with melted chocolate for extra fun.
