Fun, cinnamon-sugar cookies inspired by classic churros: crisp on the outside, soft inside, and perfect for a playful treat.

I first made these churro biscuit cookies for a themed movie night, and everybody loved their silly shapes and classic churro taste with a cookie twist.

Ingredients

  • All-purpose flour: 2 cups (250 g)
  • Baking powder: 1 tsp
  • Baking soda: 1/2 tsp
  • Salt: 1/2 tsp
  • Ground cinnamon: 1 1/2 tsp (plus 2 tsp for rolling)
  • Unsalted butter, softened: 1/2 cup (115 g)
  • Granulated sugar: 1/2 cup (100 g for dough + 1/2 cup (100 g) for rolling)
  • Light brown sugar, packed: 1/2 cup (100 g)
  • Eggs: 2 large
  • Pure vanilla extract: 1 tsp
  • Optional chocolate: melted milk or dark chocolate for drizzling

Instructions

Preheat Oven:
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
Mix Dry Ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
Beat Wet Ingredients:
In a large bowl, beat butter, granulated sugar, and brown sugar until creamy and fluffy (about 2 minutes).
Add Eggs & Vanilla:
Beat in eggs, one at a time, then add vanilla extract.
Combine Mixtures:
Gradually add dry ingredients to wet mixture and mix until just combined.
Prepare Cinnamon Sugar:
In a small bowl, combine 1/2 cup sugar and 2 tsp cinnamon for rolling.
Shape Dough:
Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in cinnamon sugar mixture to coat.
Arrange & Flatten:
Place balls on prepared baking sheets, spacing about 2 inches apart. Gently flatten cookies with your palm for a classic silly shape.
Bake:
Bake for 10–12 minutes, until edges are golden but centers are soft.
Cool:
Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
Decorate (Optional):
If desired, drizzle cooled cookies with melted chocolate for extra fun.
