Aceitunas Marinadas con Cítricos (Imprimir)

Aromáticas aceitunas mezcladas con cítricos, hierbas y especias que capturan la esencia del Mediterráneo en cada bocado.

# Ingredientes:

→ Olives & Aromatics

01 - 300 g (10 oz) mixed olives (green and black, with pits preferred)
02 - 2 strips orange zest (peeled with a vegetable peeler)
03 - 2 strips lemon zest
04 - 2 garlic cloves, smashed
05 - 1 small dried chili or pinch of red pepper flakes (optional)

→ Marinade

06 - 3 tbsp extra virgin olive oil
07 - 1 tbsp red wine vinegar
08 - 1 tsp fennel seeds, lightly crushed
09 - 1 tsp dried oregano
10 - Fresh thyme sprigs (2–3, optional)
11 - Freshly ground black pepper, to taste

# Instrucciones:

01 - Rinse olives if too salty or briny. Pat dry and place in a mixing bowl.
02 - In a small bowl, mix olive oil, red wine vinegar, fennel seeds, oregano, black pepper, and chili if using. Stir in the citrus zests and smashed garlic.
03 - Pour the marinade over the olives. Add thyme sprigs if desired. Mix well to coat.
04 - Transfer to a jar or airtight container. Refrigerate for at least 2 hours, preferably overnight, to let the flavors infuse. Bring to room temperature before serving.

# Notas:

01 - Add strips of roasted red pepper or sun-dried tomatoes for variety.
02 - Keeps well in the fridge for up to one week. Stir before serving.
03 - Great addition to charcuterie boards or antipasto platters.
