Ajoblanco sopa fría almendras (Imprimir)

Sopa fría española de almendras, ajo y pan. Cremosa y refrescante, ideal para días calurosos.

# Ingredientes:

→ Nuts

01 - 150 g blanched almonds

→ Bread

02 - 100 g stale white bread, crust removed

→ Vegetables

03 - 2 cloves garlic, minced
04 - 1 small cucumber, peeled and diced
05 - 1 small green bell pepper, diced

→ Liquids

06 - 500 ml cold water
07 - 50 ml extra virgin olive oil
08 - 2 tablespoons white wine vinegar

→ Seasoning

09 - Salt to taste
10 - Freshly ground black pepper to taste

# Instrucciones:

01 - In a blender, combine the blanched almonds, stale bread, minced garlic, and a pinch of salt.
02 - Slowly add the cold water while blending until the mixture is smooth and creamy.
03 - Stir in the olive oil and white wine vinegar, blending again until well combined.
04 - Adjust the seasoning with salt and pepper to taste.
05 - Chill the soup in the refrigerator for at least 1 hour before serving.
06 - Serve in bowls, garnished with diced cucumber and green bell pepper.

# Notas:

01 - Serve with a drizzle of olive oil on top.
02 - For added flavor, consider garnishing with croutons or fresh herbs.
03 - Pair with a chilled white wine or a light rosé.
