Gazpacho con Melón y Menta (Imprimir)

Una refrescante sopa fría española que mezcla tomates, melón y menta - ideal para el verano y lista en minutos.

# Ingredientes:

→ Base Vegetables & Fruit

01 - 500 g ripe tomatoes, cored and roughly chopped
02 - 300 g ripe cantaloupe or Galia melon, peeled, seeded, and chopped
03 - ½ cucumber, peeled and chopped
04 - ½ red bell pepper, chopped
05 - 1 small shallot, chopped
06 - 1 small garlic clove, minced

→ Liquid & Seasoning

07 - 3 tbsp extra virgin olive oil
08 - 2 tbsp white wine vinegar or sherry vinegar
09 - Juice of ½ lime
10 - Salt and freshly ground black pepper, to taste

→ Garnish

11 - 2 tbsp fresh mint leaves, finely chopped
12 - Small melon balls or cubes (optional)
13 - Microgreens or edible flowers (optional)

# Instrucciones:

01 - In a blender, combine tomatoes, melon, cucumber, bell pepper, shallot, and garlic. Blend until smooth.
02 - Add olive oil, vinegar, lime juice, salt, and pepper. Blend again until well incorporated and silky.
03 - Taste and adjust seasoning as needed.
04 - Chill in the refrigerator for at least 1 hour before serving.
05 - Stir well, then pour into bowls or glasses. Garnish with chopped mint, melon balls, and microgreens if desired.

# Notas:

01 - Use very ripe, flavorful tomatoes and melon for the best taste.
02 - For a spicier version, add a touch of jalapeño or cayenne.
03 - This gazpacho also makes a great aperitif when served in small glasses.
